Ingredient :
Part A:
500g Butter
100g sugar
8 no's egg yolk
7 Tbsp milk
1 Tbsp Rum
250g Superfine flour ( Low protein )
200g cake flour ( medium protein ) + 1 Tsp DA baking powder
Part B:
8 no's Egg white
170g sugar
1/2 tsp tatar
Part C:
Dried fruits / raisin / prune
mold - 9inc X 9 inc
preheat - 180 degree C
bake for 60 mins
Important notes :
1) Beat butter and sugar till fluffy and creammy before add in first egg yolk.
2) Seperate low and medium flour and pour in the cake batter ( learnt fromyoutube ... wonder why ?? )
Butter cake 油性太高. when the cake 膨脹 , only superfine flour couldn't hold the weight of cake, so we need to add in medium protein flour to make the texture nicer ( learnt from youtube )
3) Egg white beat till soft peak ( 濕性發泡 )

Chicken Ham and cheese sandwich
Ingredient

300g high protein flour
30g sugar
1.5tsp Instant Yeast
3/4 Egg
0.5 tsp salt
2 tbsp milk powder
150ml water
30g Butter
Step 1 :
1) put all ingredient above ( except butter ) to mixing bowl
2) beat the dough ( ~15 mins ) until 起筋.
3) put in butter and beat another 15 mins
Step 2:
Put dough in a clean bowl for first 發酵. ( 45 mins )
Step 3:
Take out the dough and flatten it with a rolling stick. Roll out the air at the same time
Put chicken ham and cheese evenly along the flattened dough
Roll up the dough and put the sandwich tin
Step 4:
Second 發酵 using 基礎發酵 method as below. ( 45 mins )
Step 5 :
Bake in pre-heat oven 200C for 18 mins
Final product

太極面包 - 十字手 Cheese bun
心血來潮 .. youtube'ing this clips 奶油小餐包
Learnt two tips to make the bread/bun soft :
1) 基礎發酵 - this step can make your bread / bun become more soft , more moist and more tasty !!
2) 在麵包上塗少許奶油 - can prevent air direct contact to bun and make it dry.
I don't have 發酵箱 in my house , so think of an alternative way to DIY it. ( use my second oven , boiled some water , put in a tray and put at upper level tray , then put the bun dough at bottom tray )
The result really satisfied !!
